ZESTY CARROTS

Ingredients
  • 1 1/2 lbs. carrots
  • 2 T. grated onion and juice
  • 1 T. spicy mustard or horse radish
  • 1/2 c. mayo
  • 1/4 c. shredded cheddar cheese
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 c. bread crumbs
  • 1/4 c. butter, melted
  • 1 tsp. paprika
Directions Slice carrots 1/4 inch thin and cook in water for 5 minutes. Drain and reserve 1/4 cup liquid. Add to liquid the onion and juice, horseradish, mayo, cheese, salt and pepper. Add carrots and spoon into a 2 qt. greased baking dish. Combine bread crumbs, butter and paprika and sprinkle on top. Bake at 350° for 20 minutes.
