Ingredients
  • 1 egg
  • 2/3 c. honey
  • 1 c. pumpkin, canned or fresh cooked and mashed
  • 1/4 c. water
  • 2 c. whole wheat flour
  • 1 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 c. chocolate chips
Directions Preheat oven to 350°. Grease muffin pan. Blend together egg and honey with wire whisk. Stir in pumpkin and water. In separate bowl, blend flour, baking powder, cinnamon, nutmeg, baking soda, and salt. Stir in chocolate chips. Blend liquid ingredients into dry ingredients just until mixed. Do notover mix. Fill muffin cups almost full. Bake 20-25 minutes. Cool 5-10 minutes. Makes 10 large or 12 medium muffins. Good hot or cold.
