Ingredients
  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 2 c. raw zucchini
  • 3 tsp. vanilla
  • 3 c. flour
  • 1 tsp. salt
  • 1 tsp. baking soda
  • 3 tsp. cinnamon
  • 1/4 tsp. baking powder
  • 1/4 c. chopped nuts or coconut
Directions Beat eggs until light and fluffy. Add oil, sugar, grated zucchini and vanilla. Mix lightly but well. Add flour, salt, soda, cinnamon and baking powder. Blend well. Add nuts or coconut. Grease 2 loaf pans. Bake at 325° for 1 hour. Yields 2 loaves.
