Ingredients
  • 2 c. water
  • 2 c. diced potatoes
  • 1/2 c. diced carrots
  • 1/2 c. diced celery
  • 1/4 c. chopped onion
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 tsp. parsley
  • 1/4 c. butter
  • 1/4 c. flour
  • 2 c. milk
  • 2 c. shredded yellow cheddar cheese
  • 1 c. ham
Directions Combine water, potato, carrots, celery, onion, salt, pepper, and parsley in a saucepan. Bring to a boil, then cover and simmer for 10-12 minutes or until tender. In a small saucepan, melt butter then add flour, stirring until smooth. Slowly add milk stirring constantly. Cook and stir over medium heat until thickened. Remove from heat and add cheddar cheese stirring until melted. Add cheese sauce to vegetables, heat through.
