GERMAN POTATO SALAD

Ingredients
  • 6 slices of bacon
  • 4 large potatoes
  • 1 onion
  • 2-3 T. sugar
  • 2 tsp. salt
  • 1/4 tsp. ground pepper
  • 1 tsp. prepared mustard
  • 1/3 c. vinegar
  • 1/4 c. water
  • 2 T. dried parsley
Directions Cut bacon into bite size pieces. Fry until well done in a pressure cooker. Pour off drippings. Cut potatoes into bite size pieces. Add potatoes and sliced onion to the bacon. Mix in a bowl: sugar, salt, pepper, mustard, vinegar, water and parsley. Mix well and pour over potatoes and onion. Mix well. Close cover securely. Cook under 15 lbs. of pressure. Cook for 5 minutes once the regulator starts to rock. Cool cooker at once. Makes 4-6 servings.
