CAULIFLOWER CHEESE SOUP

Ingredients
  • 1 med. size head of cauliflower
  • 1 T. butter
  • 2 lg. celery stalks - diced
  • 1 med. onion - chopped
  • 2 c. chicken broth
  • 2 c. evaporated milk
  • 1/4 c. flour
  • 1/2 tsp. salt
  • pepper to taste
  • 3/4 c. grated cheddar cheese
Directions Steam cauliflower florets and chopped stems until just tender; mash all but 1/3 of florets with potato masher. Saute onion and celery in butter until tender; add broth and mashed cauliflower. Bring to boil and simmer 10 min. Make a paste using flour and a little water. Add to pot along with milk. Cook and stir over med. heat until thickened. Add salt, pepper, cheese and reserved florets and heat through.
