Ingredients
  • 12 whole wheat tortillas
  • 2-15 oz. cans black beans, rinsed
  • 1 bag spinach leaves, stemmed and shredded finely
  • 8 oz. shredded monterey jack or cheddar cheese
  • 10 oz. mild or medium salsa
Directions Preheat oven to 350°. Place 2 tortillas on ungreased cookie sheet. Spread a layer of black beans on each tortilla. Sprinkle with spinach, cheese, and salsa. Top with 2 more tortillas. Bake for about 12 minutes. Repeat for 4 remaining quesadillas. Cut into wedges and serve hot. Makes 6 quesadillas. Serves 4-5.
