Ingredients
  • 3 c. frozen sliced peaches and syrup or sweetened fresh
  • 2 tsp. grated lemon peel
  • 3 T. lemon juice
  • 2 T. quick-cooking tapioca
  • 1 1/2 c. sifted flour
  • 2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/3 c. margarine
  • 1 beaten egg
  • 1/3 c. milk
  • 3/4 c. sugar
  • 1/2 c water
  • 2 T. margarine
Directions Place peaches in bottom of 2 qt. casserole, sprinkle with lemon peel juice and tapioca; sift together flour, baking powder and salt. Cut in margarine until it forms coarse crumbs. Combine egg and milk, stir into flour mixture. Mix just until moistened. Spoon over peaches. Combine sugar water and 2 T. margarine, bring to a boil. Immediately pour over batter. Bake at 375° for 45 min. or until crusty and brown.
