BAKED PARMESAN CHICKEN

Ingredients
  • 1/2 c. butter
  • 1 c. bread crumbs
  • 1/4 c. minced parsley
  • 1/2 c. parmesan cheese, fresh grated
  • 1/8 tsp. garlic powder
  • 1/8 tsp. salt
  • 2 lbs. boneless chicken breast pieces
Directions Melt butter in baking pan at 250°. Blend together bread crumbs, parsley, parmesan cheese, garlic powder and salt. Remove melted butter from oven and coat chicken first in butter, then in crumb mixture. Place chicken in remaining butter in pan. Top with remaining crumb mixture. Bake uncovered at 350° for one hour. Baste chicken once or twice while baking. Cover with foil if coating starts to brown too much before chicken is tender. Variation: To reduce fat content, dip chicken into 1/2 c. nonfat milk instead of butter.
